Turkey cooking times

How long to cook an 18 lb turkey

At 325°F, unstuffed, an 18 lb (8.2kg) turkey takes

3¾ to 4½ hours

Stuffed, allow 4 to 4¾ hours. Start checking with a thermometer at the shorter time. It's done at 165°F, then rest it 20 minutes.

18 lb sits where two rows of the USDA chart meet, so the range covers both: 14 to 18 lb takes 3¾ to 4¼ hours and 18 to 20 lb takes 4¼ to 4½ hours unstuffed.

Thawing works out USDA's rules for 18 lb: 24 hours in the fridge for every 4 to 5 lb, or 30 minutes per lb in cold water.

Plan your Thanksgiving: put in your weight and dinner time and get the time it goes in, and when to start thawing.

Is it done?

Check with a food thermometer. It's safe once it reaches 165°F in the innermost part of the thigh and wing and the thickest part of the breast. Then let it stand for 20 minutes before carving.
