Every figure on the site traces back to one of the sources below. If we've calculated something instead of reading it directly, the page says how.
Ingredient weights
USDA FoodData Central, SR Legacy data set (the final release of USDA's Standard Reference database). The data is public domain under CC0. USDA measured the gram weight of household amounts like "1 cup" or "1 tbsp" for each food, and those are the weights we show.
USDA measures are American: a US cup is 237ml and a US tablespoon is just under 15ml. For metric cups (250ml) and Australian tablespoons (20ml) we scale the USDA weight up in proportion. This assumes you fill a bigger cup the same way you'd fill a smaller one, which is close enough for cooking but not exact for fluffy ingredients.
Rounding
Weights under 10g are rounded to 0.1g. Everything else is rounded to the nearest gram. Your own cupful can easily vary by 10% depending on how you fill it, so treat any cup conversion as a good guide, and weigh where it matters (bread and pastry, mostly).
Roast times
Cooking times, oven settings and resting times come from the Q Guild, the UK butchers' quality guild. Each meat's time is its minutes-per-450g rule worked out for your weight and rounded up to the next 5 minutes. Safe core temperatures come from the Food Standards Agency and safefood (the food safety body for the island of Ireland). US minimum temperatures are from the USDA. The full list is at the bottom of this page.
